Homemade Breakfast Sausage

Ingredients:
  • 3 pounds ground pork
  • 2 teaspoons ground sage
  • 1 small onion, very finely minced
  • 1 tablespoon sea salt
  • 1 teaspoon ground mustard
  • ¾ teaspoon black pepper
  • ¼ cup real maple syrup or honey (optional)
Instructions:
  1. In a large bowl or mixer, combine all ingredients until thoroughly mixed.
  2. For best flavor, cover and refrigerate the sausage mixture for several hours or overnight. However, it can be used immediately if needed.
